Zoe's Mediterranean Baked Feta

Zoes Kitchen has added new items to its Mediterranean menu. The fast casual chain is introducing new ingredients including the lupini bean, farro, Calabrian peppers and piadina, a light and crispy flatbread.

One of the new menu items is Mediterranean Baked Feta (pictured above). It features oven baked feta, cherry tomato bruschetta, olive oil, basil and Calabrian peppers. It is served with pita chips or cucumbers. Another new item is the Rosemary Ham & Mozzarella Piadina (pictured below), which includes nitrate free rosemary ham, mozzarella, mixed greens, Calabrian pepper aioli and lemon vinaigrette.

The other two new menu items include a Spinach & Mushroom Piadina and a Live Med Salad. The new salad includes ribbons of raw zucchini and squash, spinach leaves, roasted tomato pesto farro, lupini beans, cherry tomato bruschetta and parmesan. The dressing used is a Calabrian pepper vinaigrette.

Antonio Iocchi, Vice President of Culinary Innovation at Zoes Kitchen, says in the announcement, "I grew up enjoying the benefits of real food that is packed with nutrients and flavor. By bringing these new ingredients and dishes to the menu, I'm confident our guests can eat what they love and love how they feel when they come to Zoes."

Zoes used to have a great Grilled Feta Sandwich but we haven't seen it available as of late.
