Allan Penn Makes Identity Crisis Hot Dogs for 4th of July

Allan Penn, co-author of Wieners Gone Wild!: Out-of-the-Ballpark Recipes for Extraordinary Hot Dogs was a guest on The Today Show to talk about all the exciting hot dog options available for weekend grilling. Penn and his collaborator Holly Schmidt literally wrote the book on hot dogs.

Penn urges creativity when making this 4th of July weekend staple. Some of the recipes from the book include: The Salty Dog which is covered in Siracha coleslaw and topped off with cornmeal-fried clams, the Cowboy Up!, which is an intense version of a chili cheese dog, and Hair of the Dog, which is covered with zesty hash browns and a bourbon sauce. His most intriguing dog is the Identity Crisis Dog, which he made for Kathie Lee Gifford and Hoda Kotb.

He takes a wiener and wraps it in hamburger meat, for a cross between a hot dog and a hamburger. First he mixes two pounds of 85% lean ground hamburger meat with 3 large eggs, 1 tsp of salt, 1/2 tsp of garlic powder, and freshly ground black pepper to taste. Then he takes 8 wieners and wraps each one in the ground beef mixture so that the wiener is covered. He cooks the dogs in a skillet over medium high heat to sear, then lowers the heat to medium low. Then he covers the pan to cook until the dogs are done.

Penn served the wieners on buns with a poblano pepper salsa, for which you can see the full recipe here. Penn also demonstrated his Quesadilla Hot Dogs, his Porked Dogs and his Macaroni and Cheese Dogs.
