Chef Wiley Dufresne Makes Turkey Hash With Thanksgiving Leftovers

Mark Bittman invited Chef Wiley Dufresne of WD-50 to share some Thanksgiving cooking secrets. He said he was expecting Wiley to show up with some exotic techniques for turkey and sides, but Wiley says he doesn't do the traditional Thanksgiving dinner at his house -- other people take care of that. He implies that his family would prefer to skip foam, spherification, and liquid nitrogen at family holidays. So Wiley is always put in charge of breakfast using the Thanksgiving leftovers. Here he makes turkey hash with fried eggs and sherry. Wiley is a big fan of sherry and eggs together. He also likes to finish his has with an Asian pear to add some crispy, watery texture.
