Dawn Casale and Dave Crofton of One Girl Cookies in Brooklyn and author of One Girl Cookies: Recipes for Cakes, Cupcakes, Whoopie Pies, and Cookies from Brooklyn's Beloved Bakery, demonstrate how to make perfect buttercream frosting on the Today show. Dave says to use room temperature butter -- it must be soft and easily mixed. He says the milk should also be room temperature. He said don't be afraid to add extra milk so the frosting is not too dry. He says keep the speed of the mixer low to medium -- don't add too much air to it. The vanilla extract should be high quality, and vanilla beans are better.

If you'd like a colored frosting, you can add food coloring, but don't add too much. It makes the frosting taste strange. Dave says he likes professional food coloring gel, available at a kitchen supply store. Take a look:
