Eli's Cheesecake of Chicago to Bake Enormous Inaugural Cheesecake

Eli's Cheesecake of Chicago has been invited to create a giant Inaugural cheesecake to be served at the Commander in Chief Ball. The Commander in Chief Ball honors the active duty and reserve military. President-elect Barack Obama and his wife, Michelle, are scheduled to attend the Ball. Large Inaugural cakes date back as far as 1934 when Franklin Delano Roosevelt was presented with a several hundred pound fruitcake.
The cheesecake will be a combination of Eli's Original Plain Cheesecake and Eli's Apple Cheesecake, a tribute to both Abraham Lincoln's love of apples and the strong Lincoln references present throughout Barack Obama's campaign, transition and Inaugural festivities. Eli's Inaugural dessert will be a patriotically themed three-tiered cheesecake decorated with red, white and blue fondant, gold stars, a wave of red and white stripes, and both the official Inaugural Seal in chocolate, as well as, the seals representing the five branches of the armed forces (Army, Navy, Air Force, Marines, Coast Guard). Leftovers will be donated to the Capital Area Food Bank.
The enormous cheesecake, prepared in specially constructed pans, will be baked and decorated at Eli's Cheesecake World, located on Chicago's northwest side and then transfered to D.C. via freezer truck by Eli's Master Pastry Chef, Laurel Boger, who will apply the finishing touches in Washington, D.C.
Here's a list of the ingredients involved in the 500-lb cheesecake:
- 100 pounds of cream cheese
- 30 pounds of sugar
- 25 pounds of sour cream
- 50 pounds of powdered sugar
- 126 eggs
- 15 pounds of flour
- 50 pounds of Michigan apples
- 30 pounds of butter
- 4 cups of Nielsen-Massey Madagascar Bourbon Vanilla
- 5 pounds of brown sugar
- 12 tablespoons of cinnamon from the Chicago Spice House
